This is side scan of a rock hump. There are patches of small rock and the biggest boulders are on the shallowest part of the structure. When you turn the boat to the right the left side will blur because of the movement of the transducer.
The baitfish balls will show up as a cloud of dots. On traditional sonar they will be blob like and can have the shape of a fish arch.
The suspended fish is the white dot and it has a shadow which is because the fish blocks the sound waves. It is the same principal as light making a shadow.
The hour glass shape is caused by depth change. The center white band is surface clutter and the edge of the black band is the bottom of the lake below the transducer. Note the same baitfish on the right side which tells you the baitfish were right below the transducer.
